- Black rice takes longer to cook than white rice
- It can be pre-soaked for a few hours, or overnight, to reduce the cooking time. Then cook 1:2 in fresh water (or stock) using the absorption method until tender – about 35 minutes if soaked
- Its nutty flavour makes it delicious with Asian curries!
