Cannellini beans must be pre-soaked in plenty of cold water for 8 hours, or overnight, before cooking. Drain beans, rinse well & place in a pot of fresh cold water or stock, 1:2 ratio. Bring to boil before reducing to a simmer until tender - about 1-2hours.
Smash with olive oil and seasoning, enjoy with warm crusty bread. Or mix into salads and stews.
