Polenta is delicious as a porridge or when moulded and baked into "fries".
To prepare polenta porridge, add 1 part Polenta to 4 parts boiling water & stir for about 5mins. Cook over low heat for a further 20-25mins, stirring regularly until thick. Serve with plenty of parmesan cheese (or nutritional yeast, if plant-based!).
Uncooked Polenta is also a delicious addition to baked goods and breads.
