Traditionally, this gluten free flour has been used to create pancakes, porridges, beer and flatbread such as jowar roti in India. It can also substitute for other grains in cakes, cookies, breads and muffins—although keep in mind you’ll need to include a binder such as xanthan or guar gum.
When baking with sorghum flour, use a little more oil or fat and an extra egg to improve the texture and moisture content of your recipe. Sorghum flour combines well with other mild-tasting gluten free flours like rice flour, corn flour, or potato starch.
